Chicken Salad
Spring is here and now is the best time to enjoy a delicious chicken salad. The spices I use are purchased from Thrive Market or from your local grocery store. The Avocado Mayo was purchased from Thrive Market however if you purchase Avocado Mayo from your local grocery store be sure check the ingredients for hidden sugars. This is one of my favorite meals to take to work for lunch.
Chicken Salad
Recipe
Ingredients:
2 Pieces of Chicken Breast
1/2 Onion
1 Bay Leave
1/2 tsp Garlic Powder or 5 Cloves of Garlic
1/2 tbl salt
1/2 tsp pepper
2 Stalks of Celery
3 to 4 big spoonful of Avocado Mayo
Directions:
Rinse chicken breast with cold water and place inside pressure cooker
Fill the pressure cooker with water to max line
Add onions, bay leaf, garlic power or garlic cloves, salt and pepper
Cover pressure cooker with lid, lock and close valve
Set cooker pressure to “poultry” for 13 minutes
Once chicken is done remove and set aside to cool
Strain broth and enjoy now or save for later
Shred chicken once chicken has cooled
Cut celery into small bite size pieces and add to shredded chicken
Add Avocado Mayo and mix well. The more Mayo the more creamy the salad will be
Add more salt and pepper to taste
Cover and place in fridge for at least 1 hour to chill
Enjoy with cucumbers, add your favorite hot sauce or put on top of a grain free pita chip. I also enjoy placing the chicken salad on top of pork rinds.
