Cheese Biscuits

Cheese Biscuits

When I go out to eat at a restaurant I don’t eat the bread that is given to us prior to our meal but that doesn’t mean I don’t miss bread.  Since I have been NSNG for almost 2 years I find that when I eat traditional bread that is made from flour I get either a rash on my face or my stomach hurts.  Because of this I avoid bread made with flour.

One day I had a craving for those cheese biscuits that are served at Red Lobster and it got me thinking of how can I make this Keto friendly so that I won’t break out in that horrible rash.  To my surprise I was able to perfect this recipe and every time I make these I just want to eat all of them.  These cheddar cheese biscuits are so good it is super easy to over eat.  I literally can eat 5 of these in one day.

5 biscuits in one day may not seem like a lot since they are not very big but if you think about how many almonds it takes to make almond flour then you realize that you are ingesting a lot of almonds.  Almonds are high in fat and when you are on a low carb high fat diet eating almonds is good for you as long as it is in moderation.

I recommend to only eat 2 of these even though these are Keto friendly.

  • total time: 25 minutes

Makes 12 Biscuits

Servings: 2

Ingredients:

  • 2 Cups Almond Flour
  • 1 Tbs Baking Powder
  • 1 Cup Mild Cheddar Cheese, shredded
  • 1/2 Cup Melted Butter. I use Salted Kerrygold
  • 2 Tbs Melted Butter
  • 2 Large Eggs
  • 2 Tbs Full Fat Cream Cheese
  • 1/2 Tsp Redmonds Real Salt
  • 1 Tsp Garlic Powder
  • Parchment Paper
  • Cookie Sheet

Instructions:

  1. Put parchment paper on top of the cookie sheet and preheat oven to 400 degrees
  2. In a small mixing bowl add 2 cups of almond flour, 1 tbs of baking powder, 1/2 tsp of Redmonds real salt and 1 tsp of garlic powder. Whisk ingredients together until dry ingredients are combined
  3. In a medium mixing bowl add 1 cup of the shredded mild cheddar cheese, 2 large eggs, 2 tbs of cream cheese and mix together. Try to mush the cream cheese as much as possible.
  4. Add the dry ingredients into the medium sized mixing bowl with the cheese and egg mixture.
  5. While mixing the ingredients together slowly add 1/2 cup of melted butter and mix all ingredients together.
  6. Once all ingredients are combined use a spoon and place a small spoonful of the mixture onto the cookie sheet. Be sure to space out the mixture as the biscuits rise and spread
  7. Bake in oven for 15 minutes
  8. Once biscuits are done remove from the cookie sheet and set aside on a plate.
  9. Melt 2 tbs of butter and with a spoon pour the melted butter on top of the biscuits. Continue to melt more butter if needed so that every biscuit has butter on top.

Bon Appetit
