Meatball Casserole
Looking for a delicious easy to make Meatball Casserole that taste super great and gluten free?
Try this recipe which is one of my kids favorite meals. The juicy tender meatballs go well with zucchini squash, a side salad or even by itself.
Meatball Casserole
Recipe
Ingredients:
1 pound of ground pork
2 pounds of ground turkey
1/4 cup copped fresh parsley
1 jar of sugar free pasta sauce
2/3 cup parmesan cheese
Shredded Mozzarella cheese
1/2 tbs Salt
1/2 tsp pepper
2 eggs
1 tsp Italian seasoning
1 1/2 tsp garlic powder
1 1/2 tsp onion powder
1/2 cup of Almond Flour
Olive Oil
Foil
Casserole Dish
Fresh Basil for garnish
Directions:
Preheat oven at 375 degrees
Coat bottom of casserole dish with olive oil
Combine all ingredients except for the Mozzarella cheese in a medium bowl and mix well
Scoop a handful of the meatball mixture and roll into the size of a baseball
Once the meatballs are formed place inside the casserole dish and cover with foil
Bake for 30 minutes or until the meatballs are fully cooked
Once meatballs are fully cooked remove any grease that is in the pan
Add sugar free pasta sauce on top of the meatballs
Add as much mozzarella cheese as you like. I like mine cheesy so I make sure that every meatball has lots of cheese on them
Put the meatball casserole back into the oven. Do not cover with foil
Bake for another 10 minutes or until the cheese is melted
Serve and garnish with fresh basil
