Cheese Biscuits
When I go out to eat at a restaurant I don’t eat the bread that is given to us prior to our meal but that doesn’t mean I don’t miss bread. Since I have been NSNG for almost 2 years I find that when I eat traditional bread that is made from flour I get either a rash on my face or my stomach hurts. Because of this I avoid bread made with flour.
One day I had a craving for those cheese biscuits that are served at Red Lobster and it got me thinking of how can I make this Keto friendly so that I won’t break out in that horrible rash. To my surprise I was able to perfect this recipe and every time I make these I just want to eat all of them. These cheddar cheese biscuits are so good it is super easy to over eat. I literally can eat 5 of these in one day.
5 biscuits in one day may not seem like a lot since they are not very big but if you think about how many almonds it takes to make almond flour then you realize that you are ingesting a lot of almonds. Almonds are high in fat and when you are on a low carb high fat diet eating almonds is good for you as long as it is in moderation.
I recommend to only eat 2 of these even though these are Keto friendly.

Servings: 2
Ingredients:
- 2 Cups Almond Flour
- 1 Tbs Baking Powder
- 1 Cup Mild Cheddar Cheese, shredded
- 1/2 Cup Melted Butter. I use Salted Kerrygold
- 2 Tbs Melted Butter
- 2 Large Eggs
- 2 Tbs Full Fat Cream Cheese
- 1/2 Tsp Redmonds Real Salt
- 1 Tsp Garlic Powder
- Parchment Paper
- Cookie Sheet
Instructions:
- Put parchment paper on top of the cookie sheet and preheat oven to 400 degrees
- In a small mixing bowl add 2 cups of almond flour, 1 tbs of baking powder, 1/2 tsp of Redmonds real salt and 1 tsp of garlic powder. Whisk ingredients together until dry ingredients are combined
- In a medium mixing bowl add 1 cup of the shredded mild cheddar cheese, 2 large eggs, 2 tbs of cream cheese and mix together. Try to mush the cream cheese as much as possible.
- Add the dry ingredients into the medium sized mixing bowl with the cheese and egg mixture.
- While mixing the ingredients together slowly add 1/2 cup of melted butter and mix all ingredients together.
- Once all ingredients are combined use a spoon and place a small spoonful of the mixture onto the cookie sheet. Be sure to space out the mixture as the biscuits rise and spread
- Bake in oven for 15 minutes
- Once biscuits are done remove from the cookie sheet and set aside on a plate.
- Melt 2 tbs of butter and with a spoon pour the melted butter on top of the biscuits. Continue to melt more butter if needed so that every biscuit has butter on top.
