Pressure Cooker Carnitas

Have you ever just craved some great home cooked shredded pork? No need to go out for dinner when you can have a home cooked meal that is super easy and taste great. Carnitas for dinner tonight.

The pepper, cumin, oregano are all from Thrive market. The olive oil is from Villa Cappelli, the Redmonds real salt can be purchased at Thrive market or Amazon. The onions, garlic and meat are purchased from either Trader Joe’s and/or your local grocery store.


Pressure Cooker Carnitas

Recipe:

Ingredients:

  • 2 1/2 tsp Redmonds Real Salt. set 1/2 tsp of salt aside for later

  • 1 tsp Pepper

  • 1 tsp Cumin

  • 1 tbs Minced Garlic

  • 2 tsp Oregano

  • 2 tbs Olive Oil

  • 1 Small Onion

  • 2-3 Garlic Cloves

  • 1 Orange

  • Pork Shoulder or Pork Butt

Directions:

  1. Mix in a small bowl salt, pepper, cumin, minced garlic, oregano and olive oil into a paste

  2. Coat pork with paste and place inside pressure cooker/instant pot

  3. Chop 1 small onion into halves and place on top of pork

  4. Add 2-3 garlic cloves on top of pork

  5. Sprinkle 1/2 tsp of Redmonds real salt on top of pork

  6. Cut 1 orange in half and squeeze both pieces of orange juice onto pork

  7. Place both halves of oranges on top of pork

  8. Cover pressure cooker with lid, lock and close valve

  9. Set pressure cooker on “meat” setting and manually change pressure cooking time to 60 minutes. If you do not have a meat setting use manual and set for 60 minutes

  10. Once meat is done allow the pressure cooker to auto release the pressure which last about 15 minutes. The pork should fall apart if not you can reset your pressure cooker for another 20 minutes

  11. Preheat Oven to 400 degrees

  12. Once pork is done and cooled pull pork apart and place into a baking pan. Be sure to discard any excess fat

  13. Add the juice and onions from the pressure cooker onto the pork and discard the orange halves

  14. Place pork in the oven for 30 minutes or until pork is crispy


Chop up cilantro and make tacos or if you are grain free like I am enjoy the carnitas by itself or serve for breakfast with eggs. Yummy….
