Mini Pepperoni Pizza Tart
These mini pepperoni pizza tarts are great for on the go. Easy to make and super delicious. They are great because you are not using any flour but instead are substituting the flour with almond flour. I am so amazed how these ingredients actually form a dough and taste just like pizza. You can make so many different recipes with the ingredients used for this pepperoni pizza as a base. In fact, you can make one medium sized pizza with this recipe but I actually prefer to make the 8 individual size mini pepperoni pizza’s so that I control how much I am eating.
This is a great recipe for Keto and Grain Free foods so that you don’t feel deprived and fall off the wagon or cave into those temptations.
There are many recipes on the internet and many would call this a “Fathead” pizza however, I prefer to call this “eating pizza without the guilt”. All of the fathead pizza recipes are very similar but what I like about this recipe is that they are mini sized pizza’s and you can easily pack them for lunch or on the go.
They are very filling and who knew that pizza can actually be a healthy option
Mini Pepperoni Pizza Tart

Ingredients:
- Parchment Paper
- Small pizza pan or tart pan
- Roller PIn
- 1 Cup Shredded Mozzarella Cheese
- 1/2 Cup Shredded Sharp Cheddar Cheese
- 2 oz Cream Cheese
- 1 Egg
- 1/8 Tsp Salt (equivalent to 1 pinch). I use Redmonds Real Salt
- 1 1/2 Tsp Garlic Powder
- 1/4 Tsp Italian Seasoning (equivalent to 2 pinches)
- 2/3 Cup Almond Flour. Set aside extra almond flour for later to use when rolling the dough into a pizza shape
- Marinara Sauce
- Pepperoni
- Any toppings of your choice
Instructions:
- Preheat oven to 375 degrees
- Combine 2oz of cream cheese with 1 cup mozzarella cheese and 1/2 cup of sharp cheddar cheese
- Place cheese inside microwave for 30 second intervals until cheese is melted and pliable
- Once cheese is melted mix the cheese together and set aside to cool
- In a separate bowl add 2/3 cup of almond flour, 1/8 tsp salt, 1 1/2 tsp garlic powder, 1/4 tsp Italian seasoning and mix together
- Add 1 egg to the melted cheese
- Place all dry ingredients into the melted cheese bowl
- Mix all ingredients together until dough forms. I use my hand to mix the cheese and dry ingredients together and If the dough is too sticky you can add more almond flour
- Sprinkle a little almond flour on top of the dough and roll into one big ball using your hands
- Cut parchment paper into small squares. Big enough to fit over each square on the pizza tart baking sheet or if you are using a small or medium size pizza pan be sure your parchment paper is big enough to fit on top of the pan
- After dough is formed cut into 8 separate balls
- Use a roller pin to flatten the dough and form the shape of a mini pizza. I put a small round ball on top of the parchment paper and another piece of parchment paper on top of the dough and gently roll out
- Once all 8 pieces of dough are formed into mini pizzas pierce the top of each one with a fork to prevent the crust from rising
- Sprinkle a little more garlic powder on top of the pizza crust. You can use as much or less garlic powder you desire
- Put pizza in oven and bake for 10 to 15 minutes
- Remove from oven and pierce with fork again if dough rises
- Add pizza sauce or marinara sauce on top of each mini pizza crust
- Add mozzarella cheese and your favorite toppings. For this recipe I used pepperoni
- Place back inside the oven and bake for an additional 8-10 minutes or until the cheese is melted
Note: Be sure to read the ingredient list on the marinara sauce to make sure you are not consuming any hidden sugars
