Zesty Italian Chicken

With summer just around the corner now is the time to enjoy some Zesty Italian Lemon Chicken. This recipe is so easy and so delicious. You can prepare this in advance and have it ready to cook at a later time or cook for tonights dinner. This definitely makes eating chicken a delight more than 1 time per week.


Zesty Italian Lemon Chicken

Recipe

Ingredients:

  • Chicken legs and thighs.  Keep skin on

  • 2 tbl Olive Oil 

  • 1 tsp Wind Spice Seasoning from Thrive Market (optional)

  • 1 tsp Salt.  Redmonds Real Salt

  • 2 Lemons

  • 1/2 tsp Lemon Pepper.  Trader Joes has a good one

  • Fresh Parsley

Directions:

  • Rinse Chicken with cool water

  • Drain Chicken in colander to get rid of excess water

  • Place Chicken in large ziplock bag

  • Mix in a small bowl 2 tbl of Olive Oil, 1 tsp Wind Spice, 1/2 tsp Lemon Pepper, 1 tsp Salt

  • Cut 2 lemons in half and squeeze all 4 pieces into ziplock bag onto of Chicken.  Be sure to take out any seeds from the lemon that may have slipped into the ziplock bag

  • Cover Chicken with marinade and place in refrigerator for 1 to 4 hours.  The longer the chicken marinates the more flavor your chicken will have. Side note: if time does not permit to marinate in refrigerator for up to 4 hours you can add more lemon juice when chicken is cooked to give it an extra tang

  • Once Chicken has marinated drizzle Olive Oil into frying pan

  • Place chicken in pan and cover with lid

  • Make sure burner on stove is on low so that the Chicken can cook thoroughly and does not dry out

  • Turn Chicken over several times until Chicken is fully cooked

  • Once Chicken is fully cooked remove lid and turn up burner on stove to high.  This will allow for you to fry the outside of the Chicken so that it is crispy.  My daughter absolutely loves the lemon flavor so I will add the juice of 1 more lemon for her.  Oil and water do not mix so be careful when adding lemon juice.  I make sure to add the juice onto the Chicken and not directly in the pan

  • Chop fresh parsley and sprinkle on top of the chicken
